I'm doing the Whole 30




My 2nd Experience

with the Whole30 Program and Paleo eating

Day 12 - February 15th, 2014

On this second run of my Whole 30, I'm really not finding the time to write this site. :o( Today is actually day 17 and I'm still writing about day 12. Needless to say I can't remember much of what happened. But I'll try my best.

Meal 1

In the morning, I had eggs with avocado and apparently some sumac sprinkled on top (I did took pictures on the 3 meals today, so it helps remembering things... ;o).

Meal 2

For lunch, I had cauliflower rice, with grpund beed and collard greens, which I sauteed with mushroons and onions.

Meal 3

At night, I wanted something that felt like a quick easy fix, instead of a full meal. The problem is that what sometimes feels like an easy quick fix, can be pretty time consuming to get ready. But still felt great not to have a 'regular' meal. So my bet for today was some eggplant pizzas. I made 4, and topped each pair differently. So I had 2 of them topped with tomato sauce, vegan pasto, prosciutto and olives, and the other 2 toppes with tomato sauce, smoked salmon and pico de gallo. Yumm!
