My 2nd Experience
with the Whole30 Program and Paleo eating
Day 7 - February 10th, 2014
Today I had no meat ready to eat at home. Well... I actually had for me, but not for the rest of the family, so I plan to get home not too late so I could cook some ground beef for dinner. But then, the beef was still frozen! What saved my day? Matthew! Yes! We were planning some food swaps in out group, but non has yet been scheduled. Matt, though, has cooked a bit too much Kahlua Pork over the weekend and on Sunday night he emails the group asking if someone would like some. I replied and got a container with a pretty good amount of pork in the morning. I used a bit of it to top my salad at lunch, and then when I got home and realized the beef was out of reach for dinner, that was what saved the day (or should I say the night). Thanks, Matt!!!!
Today I had my eggs on a slightly different format. Instead of scrambled with something, I did them fried on top of something. The something was pico de gallo and avocado, which were topped with 3 beautiful fried eggs.
At lunch I decided to try Matt's pork instead of getting the tuna or shrimp from the salad bar. I still went to the salad bar, but assembled a meatless salad, that I brought to the office to top with the pork and enjoy. Good stuff! In the salad I had spinach, arugula, cabbage, sweet peppers, mushroom, tomatoes and zucchini.
For dinner, after realizing I would not be able to prepare the beef on time, I had the pork again. But this time with roasted eggplant and roasted cauliflower. The eggplant was actually 3 slices that were leftovers from yesterday (so already cooked), on which I sprinkled some curry powder and put it in the oven together with the cauliflower. It ended up being the highlight of the meal. So delicious! .
